I have had the honor to host MLLA this month, and  it has been a pleasure receiving and reading your delicious recipes. The round up will be on line on Monday 3rd February and then I will also announce the winners.🙂

Fava bean & Carrot soup with orange

Fava & Carrot soup with orange - Zuppa di fave e carote all'arancia

You need
200gr of dried fava beans
5 carrots
1 leek
1 small clove of garlic
water
extra virgin olive oil
fresh sage leaves
1 organic orange

Let soak the fava beans covered with water over night.
The next day drain the beans and put aside.
In a pressure cooker pour some oil and add the garlic and the sage leaves.
Let fry gently and then add the leek cut in slices.
When the leek is soft add the fava beans, the carrot cut in slices and the grated peel of the orange.
Cover with water (1,2l*), close the lid and when the pressure cooker whistles lower the heat and let cook for 40min.

When ready serve immediately with grind black pepper.
Healthy, colorful, fast and delicious😀

  1. This recipe sounds very nice: I must try it soon. I like dried fava beans, which I started using only a few years ago. They make great soups.
