Fava bean & Carrot soup with orange
200gr of dried fava beans
1 small clove of garlic
extra virgin olive oil
fresh sage leaves
1 organic orange
Let soak the fava beans covered with water over night.
The next day drain the beans and put aside.
In a pressure cooker pour some oil and add the garlic and the sage leaves.
Let fry gently and then add the leek cut in slices.
When the leek is soft add the fava beans, the carrot cut in slices and the grated peel of the orange.
Cover with water (1,2l*), close the lid and when the pressure cooker whistles lower the heat and let cook for 40min.
When ready serve immediately with grind black pepper.

* With less water (1l) you will obtain a thicker soup.
