Every time it is the same..
after some hours of walking we start talking about FOOD!

If it is bigger groups we usually end up in some restaurant along the way, if it is with the guest from the hotels we end up in some bar.
It is fascinating to hear what people in other countries do with the some ingredients we use.
I started to use Elder berries and quince f. ex, much much more since I walk with my tourists.

This recipe was given me by Margit after the walk Pai di Sotto – Castelletto

Elderflower and Herb Vinegar- Hollunder und Kräuter essig –

 Fläder och ört ättika

Elderflower and Herb Vinegar- Hollunder und Kräuter essig - Fläder och ört ättika -

You need:

1 L White wine Vinegar
2 Elderflowers
1 twig Sage
1 twig Majoran or Estragon
1 twig Thyme
2 twigs of Basil
1 chili (optional)

Put the elderflowers and the herbs in a glass jar.
Pour over the vinegar and close lid.
Leave in a warm place for one week.

Add the chili and leave in the same place for another week.

Filter and enjoy.

It is very nice with green salad and you just must try it with a potato salad. wow!
