Creamy chicken soup - Crema di pollo
This is a very busy period, I’m helping out the two of the guides that are going to take my place in the walks this summer(they are three, but one doesn’t want my help, as a matter of fact he is criticizing all my work done till now), walking, discussing, photographing and searching new paths. At the same time I’m preparing for the trekking in Sahara we are going to do in the end of March.
Time is slipping through my fingers.
Weather is lovely, actually to hot and sunny for the season, there is a lot of snow but it is not good for anything. We went from Prada Alta (1060mt) to Fiori del Baldo 1815mt today (800mt high difference in little more than 3km), but it was though. We used calkins but the snow wasn’t icy enough for them, but on the other hand the snow was to hard for the snowshoes. Too bad, so much snow and so ugly😦

But if you stay on the Garda lake, the sun makes all the colors bright and it is a pleasure walking in the olive fields, in the woods, along al mule paths.

Crema di Pollo – Creamy chicken soup – WHB # 424
Easy and quick soup, that taste even better the day after

Creamy chicken soup - Crema di pollo

You need:
Chicken breast
2 potatoes
4 carrots
1 leek
1 clove of garlic
1 bay leaf (dried is better)
3 fresh sage leaves
a piece (big) of fresh ginger
paprica
pepper
extra virgin olive oil

In a large pot pour some olive oil, add the vegetables cleaned, peeled and cut in pieces, together with chicken breast in cubes and the spices.
Let the flavor combine, and after 7-8 min add water to cover all.
Cook on medium heat for half an hour, the blend with an immersion blender.
Season with paprica and pepper, serve with a crumble made of old bread and nuts.
