Cold zucchini soup with sage - Crema fredda di zucchine e salvia

It is June, even if it doesn’t seem so. My roses that have some shelter like a roof, trees or walls are still blooming and are looking pretty.
The others like the two poor banksia have been completely ruined by the pouring never-ending rain.
My Sally Holmes is became very big in the last couple of years. Now it is flowering overabundant with big slightly peach and white colored simple roses.

Also the Sevillana half protected by the roof is blooming with its red flowers.


I’m not specially found of Red roses, but this one is very special. I can’t remember its name, I should look it up.
It is a very old rose and it comes from my mother-in-laws mother’s old garden in Germany.
It is deep red, soft as velvet and very perfumed. we call it “Nonna Reneè”.

We have left more then half of the garden how it was when we found it…wild.
We don’t mind even if it perhaps looks untended. We have always loved the wild free spirit about it.
In the high grass you an fins very special flowers, like the endemic small Monte Baldo orchids.

But perhaps I’m most proud over this strange flower growing under an old red oak (Quercus pubescens) in our front garden.
It’s called Limodorum abortivum- Violet bird’s-nest Orchid, and is an endemic orchid too.

This is a photo made by Peter who walked with me to Balòt. He had never seen this flower alive, always only in a photo or drawing.
It felt strange telling him, we have three flowers blooming in our garden.

So, sitting in the sun looking at all this flowers why not try this cold delicious zucchini soup?

Cold zucchini soup with sage - Crema fredda di zucchine e salvia

You need:
4 medium zucchini
1 onion
fresh sage leaves
1 tsp of fennel
water q.b

Chop the onion and gentle fry in some olive oil (extra vergin) add sage leaves and the fennel.
After a couple of minutes add the sliced zucchini.
Cover with water ca 750ml and let cook for 20min.
If the zucchini are soft, blend with a immersion blender.
Let cool and serve luke warm or cold.

    Che belle le tue rose! Spero che la bella stagione arrivi finalmente. Siamo sulla stessa lunghezza d’onda: Ho appena tirato fuori dal freezer della zuppa di zucchine: adesso che comincia la stagione, e’ il caso che finisca le scorte. Buon weekend!
