Maize & Buckwheat cake with red fruits

This is a recipe I have found in my friend Anca’s blog
Matrioska adventures.
I’ve tried it also with apples and is came out as good as the original one.

Maize & Buckwheat cake with red fruits

I’ve made my usual changes, no sugar and no butter.
Here is the original recipe:
225gr weakned butter
225gr caster sugar
4 eggs
175 gr maize flour
50gr buckwheat flour
1 1/2 tsp baking powder(ca 8gr
1 tps rum or brandy
zest from 1 lemon
100ml milk
220gr of blackberries
icing sugar
butter for the mould

My recipe:
175gr maize flour
50gr buckwheat flour
50gr almonds
4 eggs
1tps rum or brandy
1 1/2 tps baking powder
zest from 1 lemon
140ml(ca) of soy milk
40ml of sunflower oil
40ml of barley malt
200gr mixed red fruits

Beat the whites very stiff and set aside.
Grate the almonds and set aside.
Combine eggs, milk, oil, malt, zest and rum/brandy
Add the flour and the grated almonds and mix well.
Then add the egg whites one spoon at a time.
Mix carefully.
POur half of the compound in a mold covered with baking paper or use a silicon mould
then add the red fruits (also frozen is ok) and cover with the rest of the compound.
Bake in oven 180°C for aprox 40-45min.
Delicious!!!
