some reciepes I find wandering about in the bloggosphere…
this particulary one…I found on zorra’s blog, the other day..
there was nothing else to do but try it!!
zorra is incredible…doing funny and interesting things all the time..

500 g Apricots
100 g tosted cocco flakes *
300 g white sugar
put all ingredients in a big pot.
leave it marinate for some hours, 2 hours is enough.
then give it a stir , and then keep mixing with a wooden spoon, let cook for ca 6min.
if you want a perfectely smooth marmelade, now you take the pot of the heat and mix it with a immersion blender, you make it all smoooth.**
let stir up again an cook until the marmelade has reached the right density.
pour in perfectly clean jars, turn on the cover and put the jars to cool upside down.
leave them upside down until they are perfectly cooled.
store in a cool and dark place.
perserving time: 6-8 months (due to the fresh cocco flakes)
if you use fresh cocco, grate it and toast it in a hot pan
I didn’t blender the marmelade, because I like it with pieces.
