Spring is not here yet, so we are still enjoying the winter and it’s unpredictable weather.
It goes from snow, to rain, fog and sun.
The sky changes color every single day, it is simple beautiful.
Sunday we had a very fun walk under falling snow.
It was incredible how much snow was coming down, in silent, dry, crispy snowflakes.
Today we putted our snowshoes on and made a crazy walk (yes, we almost lost ourselves) in the snow in Val da Sacco.
It was very difficult because the snow was virgin, nobody had walked before us making paths.
Every single footstep was so heavy, and we all admired Simoo doing the most of the tracking.
It tried to do some myself, but had to leave the command to Simoo after only 10min of walk.
The view was incredible, sky blue and the snow so shiny white.
It was good to come home and find lunch ready.
Red lentil & shallot velluteè with Curry & Cumin – Crema di lenticchie rosse e scalogno con curry e cumino
250gr of orange lentils
5 or 5 shallots
1 big potato
1/4 of a small pumpkin
1 liter of water
curry (a lot)
paprica (a lot)
cumin (a lot)
extra vergin olive oil
sale and pepper
sun flower sees
chop the shallots and let gently fry together with all the spices in some olive oil.
add the lentils washed under cold runing water, and all the vegetables peeled, cleaned
and cut in small pieces.
mix and let the perfumes mingle.
add the water, close the lid and when the cooker whistle, lower the heat
and let cook for 25min.
when finished, whisk with a immersion blender, season with salt and pepper
serve with sun flower seeds and some extra virgin olive oil
